Greek Pasta Salad

Every August, as summer drew closer to an end, we spent most of our days savoring the sun & BBQing our way into the evening. Our BBQs consisted of your typical burgers & dogs, but the side dishes were always my favorite part! Depending on the weekend, we would generally have anywhere from 1-6 houseguests staying with us, which made mealtime all the more exciting! Having friends and family from all over the world staying with us meant many different pallets & thus, many delicious foods to try! Contrary to the typical mayo-based pasta salad, my Greek version soon became a family favorite!


Greek Pasta Salad

Serves: 4-6 People
  • 1 box dry cavatappi pasta
  • ½ English cucumber, medium diced
  • 1-pint cherry tomatoes, halved
  • 8 oz feta cheese, crumbled
  • ½ c kalamata olives, pitted & halved
  • 3 Tbsp red onion, minced
  • 1 c spinach, packed & rough chopped
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp red wine vinegar
  • 1 Tbsp balsamic vinegar
  • ½ lemon, juices
  • 1 tsp garlic powder
  • 1 tsp white pepper
  • Salt and Pepper
  1. Cook pasta in salted boiling water until al dente.
  2. Strain, rinse under cool water & then transfer into a large mixing bowl.
  3. Add cucumber, tomatoes, olives, onion, spinach, garlic powder & white pepper.
  4. Mix thoroughly, making sure the spices get evenly distributed.
  5. Add feta cheese, olive oil, vinegars & lemon juice and continue to mix until well combined.
  6. Check for seasoning.
  7. Transfer to a large serving bowl & serve at room temperature.
